Aunt Edna's Oatmeal Cookies

My mom passed this recipe down to me. It belonged to great aunt Edna. I imagine these were popular at gatherings of people in the farming community. They are certainly popular at our house and with those we share them with. The outsides of these cookies are rolled in crushed corn flakes for a tasty texture. I use Nature's Path organic corn flakes from the natural foods isle at the grocery store. I also use One Degree organic sprouted oatmeal from Costco.


We believe that healthy eating and healthy attitudes about food include treats in moderation.


In a bowl combine the following ingredients:


1 cup butter

1 cup granulated sugar

1/2 cup brown sugar

1 egg


Use a mixer to thoroughly mix.


Add to the bowl:


1 1/2 cups all purpose flour

3/4 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt


Use the mixer to combine all ingredients to form a smooth dough.


Add to the bowl:


1 1/2 cups rolled oats

1 cup sweetened shredded coconut


Use a large mixing spoon to combine all the ingredients.


Crush some cornflakes by placing them in a bag. Pour the crushed corn flakes onto a plate.


Line cookie sheet with either parchment or a silicone baking mat.


Use a cookie scoop or a teaspoon to measure out dough to roll into balls. Roll the balls in the crushed corn flakes.


Place balls on cookie sheet and flatten with either a fork or glass.


Bake at 350 degrees Fahrenheit for 10 - 12 minutes. After removing from oven, let the cookies sit on the pan for 10 minutes before transferring to a cooling rack.
