Cabbage Roll Casserole

In my opinion, this is so much better than cabbage rolls. Easy to put together with simple, healthy ingredients and into the oven. Tastes so good. You will want seconds. Even better the next day.


In a pan add the following:


2 pounds ground beef

2 medium onions chopped

6 cloves garlic, minced

1 1/2 teaspoon salt

1/2 teaspoon pepper


Cook until beef is browned. Remove from heat.


In a large bowl combine:


6 cups chopped cabbage

1 1/2 cups basmati rice (uncooked)

1 - 27 ounce can of diced tomatoes

2 - 14 ounce cans of tomato sauce

2 teaspoons dried basil

2 teaspoons dried oregano

1 teaspoon salt


Add to the bowl:


Ground beef and onion mixture from the pan.


Mix thoroughly with a large mixing spoon.


Transfer to a deep 9 x 13 baking dish and cover with foil. Place on a foil lined cookie sheet to avoid any possible drips into the oven. An alternative is cooking in a small roaster with a lid.


Bake at 375 degrees Fahrenheit for 2 hours or until rice if fully cooked.
