Easy to make in one pan on the stove. The is a favorite when I have to pull together a quick meal that is also satisfying and healthy.
In a large pan combine the following:
2 tablespoons avocado oil (or whatever oil you choose)
4 chicken breasts, cubed into small chunks
2 large onions chopped into large chunks
6 cloves of garlic, minced
1/2 cup soy sauce
1 tablespoon yellow curry powder
Stir fry until chicken is browned.
Add to the pan:
2 cups red pepper, cut into large chunks
2 cups green pepper, cut into large chunks
2 cups sliced carrots
Stir fry with the chicken and onions. Stir fry until chicken is cooked and vegetables are slightly tender.
Sprinkle over the stir fry mixture in the pan:
1/3 cup all purpose flour
Stir fry until flour is mixed in without any flour lumps.
Add to the pan:
14 ounce can of coconut milk
6 tablespoons lime juice
Stir until sauce thickens. When sauce thickens, it is ready to serve.
Serve with white or brown Basmati rice.
