This is our favorite chocolate chip cookie recipe. It is top notch! Loaded with chocolate chips, oatmeal, coconut, and pecans. Buttery delicious!
The recipe makes enough to put a large container in the freezer to have on hand.
I get my pecans at Costco due to better pricing. Yupik also sells in 1 kg bags also found at Costco. I use One Degree organic sprouted oatmeal from Costco.
We believe that healthy eating and healthy attitudes about food include treats in moderation.
In a bowl combine the following ingredients:
1 1/2 cups butter at room temperature
1 1/2 cups granulated sugar
3 eggs
1 tablespoon vanilla extract
Mix thoroughly with a mixer.
Add to the bowl:
3 cups all purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
Use the mixer to combine all ingredients into a smooth dough.
Add to the bowl:
3 cups old fashioned rolled oats
2 cups sweetened shredded coconut
2 cups chopped pecans
Use a large mixing spoon to combine thoroughly into the dough.
Use a cookie scoop or drop by teaspoons full onto a cookie sheet. I use parchment paper or a silicone baking mat on the cookie sheet.
Bake at 350 degrees Fahrenheit for 17 - 20 minutes. After removing from oven, let the cookies sit on the pan for 10 minutes before transferring to a cooling rack.
