A delicious, satisfying, family favorite. Makes 1 quiche.
In a bowl blend 6 eggs with a stick hand blender or equivalent.
Add to the blended eggs:
3/4 cups whipping cream
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon Dijon mustard
2 tablespoons chives
3/4 cup cubed ham chunks (or 6 strips of cooked bacon cut in small pieces)
1 1/2 cups shredded cheddar cheese
Mix with a whisk. Let sit.
In a pan, saute the following:
2 teaspoons butter
1/2 cup cooked and drained chopped spinach (squeeze out extra moisture)
1/2 cup finely chopped onion
Cook until the onion is tender.
Prepare one pie crust in a pie plate and place on a cookie sheet. (cookie sheet is optional)
Spread spinach and onion mixture evenly across bottom of pie crust.
Pour egg mixture over top of spinach.
Bake at 375 degrees Fahrenheit for 30 minutes or when a fork stuck in the middle comes out clean.
