Pesto

Basil is easy to grow. I use fresh basil from my garden for this recipe. After the pesto is blended in the food processor, I freeze it in jelly jars for use by taking it out of the freezer in advance.


There are many uses for pesto. One of my favorite ways by adding cream cheese to toasted baguettes with olive oil and topping with pesto. Another use is my layered Pesto Terrine. My family really enjoys sundried tomato and pesto pasta. We also enjoy pesto baked chicken.


In a food processor combine the following ingredients:


1/2 cup pine nuts

3/4 cup grated parmesan cheese (packed)

3/4 cup extra virgin olive oil

2 cloves of garlic

1 teaspoon salt

6 cups fresh basil (packed)


Process until desired consistency. I enjoy mine as a spreadable paste.
