This is a very simple chicken dish baked in the oven. You will be surprised at how delicious this is without a lot of work put into it. It goes well with a vegetable side dish or a salad. I also serve this with Oven Roasted Potatoes. The recipe is found on this web site under side dishes.
In a small roaster or 9 x 13 baking dish add:
6 chicken breasts
Season the chicken breasts on both sides with salt and pepper.
Add to the chicken:
One 8 ounce jar of pesto (I use my own pesto made ahead of time - recipe is on this site under snacks or condiments)
Spread the pesto evenly on both sides of each chicken breast.
Cover the baking dish with foil or use lid if using a roaster.
Bake at 375 degrees Fahrenheit for 20 minutes. Remove cover and bake for another 10 - 15 minutes.
Ready to serve.
