Rice Pilaf

This is my easy rice pilaf recipe. I serve it with Greek chicken. It can be served as a side with whatever you want.


In a pot on the stove add:


2 cups chicken broth

1/2 cup finely chopped onion

1 1/2 cups white basmati rice (if you use brown basmati rice, adjust amount of chicken broth for brown rice)


Bring to a boil and reduce temperature to low until rice is cooked. Fluff with a fork.


Add to the cooked rice in the pot:


1 1/2 cups frozen peas and carrots mix

1/2 cup finely chopped celery (optional)


Stir into the rice and let sit on low heat until vegetables are warm.


Serve.
